Mix the purple & blue together and then pour on top of the black macaroni 10.) Add lines of pink and spread around with swirls to get a galaxy look 11.) Lastly take the white, pour it into a tiny bowl. Mix the purple & blue together and then pour on top of the black macaroni 10.) Add lines of pink and spread around with swirls to get a galaxy look 11.) Lastly take the white, pour it into a tiny bowl. Buternut Squash Mac and Cheese

Being on vacation taught us as much as we try to have our kids eat healthy, they will always want to eat some mac and cheese. We decided we could just make it more at home, with a bit more vegetables. It is not the healthiest but it sure was delicious. We paired it with a butter lettuce and radicchio salad with red onions, cucumbers and balsamic vinegar. Super simple and fresh to go with the mac and cheese. For my picky eater Hiro, little did he know all that "cheese" he thought he was eating was butternut squash. Got you Hiro! We made it with whole wheat pasta instead of regular pasta. Being on vacation taught us as much as we try to have our kids eat healthy, they will always want to eat some mac and cheese. We decided we could just make it more at home, with a bit more vegetables. It is not the healthiest but it sure was delicious. We paired it with a butter lettuce and radicchio salad with red onions, cucumbers and balsamic vinegar. Super simple and fresh to go with the mac and cheese. For my picky eater Hiro, little did he know all that "cheese" he thought he was eating was butternut squash. Got you Hiro! We made it with whole wheat pasta instead of regular pasta. For easier prep of the butternut squash, I bought it already cubed and peeled. You can by it whole and do it yourself, but sometimes it is just easier and faster if someone has already it done it for you. If you can only buy it whole, roast the entire squash for 45 minutes. Let it cool and scoop out. It is so much easier to peel after it is roasted. Then just add the roasted squash to the blender along with all the spices, almond milk and cheese.
