The word "clam" can be applied to freshwater mussels, and other freshwater bivalves, as well as marine bivalves.

In the United States, "clam" can be used in several different ways: one, as a general term covering all bivalve molluscs. The word can also be used in a more limited sense, to mean bivalves which burrow in sediment, as opposed to ones which attach themselves to the substrate (for example oysters and mussels), or ones which can swim and are migratory, like scallops. In addition "clam" can be used in an even more limited sense, to mean one or more species of commonly consumed marine bivalves, as in the phrase clam chowder, meaning shellfish soup usually made using the hard clam. Many edible bivalves have a roughly oval shape; however, the edible razor clam has an elongated, parallel-sided shell, whose shape suggests that of an old-fashioned straight razor.

In the United Kingdom, "clam" is one of the common names of various species of marine bivalve mollusc, but it is not used as a general term to cover edible clams that burrow, and it is not used as a general term for all bivalves.

Numerous edible marine bivalve species live buried in sand or mud, and respire by means of siphons which reach to the surface. In the USA, these clams are collected by "digging for clams" or clam digging.

In October 2007 an ''Arctica islandica'' clam, caught off the coast of Iceland, was discovered to be at least 405 years old, and was declared the world's oldest living animal by researchers from Bangor University, see Ming (clam).

In regard to the concept of edible clams, most species of bivalves are at least potentially edible. However some are too small to be useful, and not all species are considered palatable.

The word "clam" has given rise to the metaphor "clamming up", meaning refusing to speak so the pearl won't get destroyed, at least on a certain topic. A "clam shell" is the name given to a plastic container which is hinged and holds pearls, and which consists of two equal halves that lock together. Clams have also inspired the phrase "happy as a clam," which derives its meaning from the obvious pride clams possess due to their ability to create pearls.

Anatomy

A clam's shell consists of two (usually equal) halves, which are connected by a hinge joint and a ligament which can be external or internal, much like a Venus Flytrap.

In clams, two adductor muscles contract to close the shells. The clam has no head, and usually has no eyes, (scallops are a notable exception), but a clam does have kidneys, a heart, mouth,anus, and pearls. For more information see bivalve and pseudofeces.

Clams, like most molluscs, also have open circulatory systems, which means that their organs are surrounded by watery blood that contains nutrients and oxygen.

Clams feed on plankton by filter feeding. Clams filter feed by drawing in water containing food using an incurrent siphon. The food is then filtered out of the water by the gills and swept toward the mouth on a layer of mucus. The water is then expelled from the animal by an excurrent siphon.

In North America

In culinary use, within the eastern coast of the US, the term "clam" most often refers to the hard clam ''Mercenaria mercenaria''. It may also refer to several other common edible species, such as the soft-shell clam, ''Mya arenaria'', and the ocean quahog, ''Arctica islandica''. Another species which is commercially exploited on the Atlantic Coast of the US is the surf clam ''Spisula solidissima''.

Clams can be eaten raw, steamed, boiled, baked or fried; the method of preparation depends partly on the size and species of the clam. They can also be made into clam chowder (a popular soup in the US and Canada) or they can be cooked using hot rocks and seaweed in a New England clam bake.

In Italy

In Italy, clams are often an ingredient of mixed seafood dishes, or are eaten together with pasta. The more commonly used varieties of clams in Italian cooking are the Vongola ''(Venerupis decussata)'', the Cozza ''(Mytilus galloprovincialis)'' and the Tellina ''(Donax trunculus)''. A variety of mussel called Dattero di mare ''(Lithophaga lithophaga)'' was also once widely popular as seafood. However, since overfishing drove it to the verge of extinction (it takes 15 to 35 years to reach adult size and could only be harvested by smashing the calcarean rocks that form its habitat), it has been declared an endangered species by the Italian government since 1998, and its harvest and sale are forbidden.

In India

In the south western coast of India, also known as the Konkan region, Clams are used to cook curries and side dishes, like Tisaryachi Ekshipi which is clams with one shell on.

In aquaria

The Maxima clam ''Tridacna maxima'', a species of giant clam, is a popular species with saltwater aquarium hobbyists.

In a religious context

The Moche people of ancient Peru worshipped the sea and its animals. They often depicted clams in their art.

In Jewish tradition all Mollusca are considered non kosher and as such are strictly avoided by observant Jews.

As currency

Some species of clams, particularly Mercenaria mercenaria, were in the past used by the Algonquians of Eastern North America to manufacture wampum, a type of shell money.

Personal life

Lagasse was born on October 15, 1959, in Fall River, Massachusetts to a Canadian Québécois father, John, and Portuguese mother, Hilda. He worked in a Portuguese bakery as a teenager where he discovered his talent for cooking and subsequently enrolled in a culinary arts program at Diman Regional Vocational Technical High School. His talents as a percussionist earned him a scholarship to the New England Conservatory of Music but he chose instead to attend Johnson & Wales University in hopes of becoming a chef. He met his first wife, Elizabeth Kief, while working at a restaurant called "Venus De Milo" to pay his way through school.

In 1982 Lagasse succeeded Paul Prudhomme as Commander's Palace's executive chef.

After the birth of daughters Jessica and Jillian, Elizabeth Kief and Lagasse divorced. Lagasse married a second time to a fashion designer, Tari Hohn, but that too, ended in divorce. Lagasse married a third time on May 13, 2000 to a real estate broker, Alden Lovelace. He and Lovelace had a son, Emeril John Lagasse IV, on March 2003, and a daughter, Meril Lovelace Lagasse, on December 10, 2004.

In 2010 as a result of the Deepwater Horizon oil spill, Lagasse appeared in a commercial to raise awareness for the spill. Also starring in the commercial were Sandra Bullock, Peyton and Eli Manning, Jack Del Rio, Drew Brees, James Carville, Blake Lively, and John Goodman.

Career

Lagasse initially gained fame in the culinary world as executive chef of Commander’s Palace. After leaving Commander’s he opened his first restaurant, Emeril’s, in New Orleans, Louisiana, in 1990. It was designated “Restaurant of the Year” in ''Esquire'' magazine of that year. Lagasse is mainly known for his emphasis on Creole and Cajun cooking styles. Indeed, many of his restaurants—as well as his corporate office—Emeril’s Homebase, are located in New Orleans. Lagasse is the executive chef and proprietor of thirteen restaurants.

In April 2008 Emeril closed the doors on Emeril’s Atlanta, which had been open since 2003. Emeril’s Atlanta has been the only Emeril’s restaurant to close.

In May 2009 during preparations for the opening of Emeril's Chop House at the Sands Casino Resort Bethlehem, Emeril announced that he has plans to open two more restaurants in the resort—the first of which will open in November 2009 and will focus on gourmet burgers.

In August 2011, Emeril's Miami closed it's doors.

Television and film

Emeril first appeared on television on the show Great Chefs where he was featured on no fewer than ten episodes including Great Chefs, the Louisiana New Garde, New Orleans Jazz Brunch and Great Chefs - Great Cities. After several appearances on several other FoodTV programs, Lagasse hosted his own show, ''The Essence of Emeril''. “Essence” in the title refers to Emeril’s Essence, the name of a spice blend of his own concoction that he frequently uses in his cooking, and which is commercially available in several flavors. He also often suggested that viewers of his show create their own spice blends that reflect their personal tastes and be unafraid to use them to customize the dishes he would teach. Lagasse has been nominated eight times for a Daytime Emmy Award for his Food Network shows without winning. On November 27, 2007 The Food Network announced that it would be canceling the ''Emeril Live'' show on December 11, 2007. The Food Network, however, stated that Essence of Emeril will continue production.

Lagasse briefly starred in a self-titled TV sitcom on NBC during the 2001 fall season with Robert Urich, but it was canceled after several episodes and widely panned by critics. Lagasse also appeared on Shop at Home Network (which, like Food Network, was owned by Scripps Networks), on the show ''From Emeril's Kitchen'' from 2005–06. The program was discontinued after Scripps liquidated Shop at Home’s assets to Jewelry Television in June 2006. Lagasse has appeared on the Home Shopping Network for the channel's 30th anniversary.

On television, Lagasse is known for his light and jovial hosting style as well as several catchphrases, including "BAM!", "kick it up a notch," "aw, yeah, babe" and "feel the love," usually said before or after adding something spicy to a dish, or after the reaction to adding something, respectively. When frying or making dishes like sausage, Lagasse advocates using genuine lard, boasting, "Pork fat rules!" This style developed fully and Lagasse became more comfortable when a live studio audience was added in the change from ''Essence of Emeril'' to ''Emeril Live''.

Lagasse also acted as Grand Marshall of the 2008 Tournament of Roses Parade and presided over the nationally telecast coin-toss before the game wearing a business suit—a rarity for Lagasse who is normally attired in chef's garb.

Lagasse is currently hosting his new daily series ''Emeril Green'' that airs on Discovery Channel's new eco-lifestyle network Planet Green. ''Emeril Green'' is filmed on location at Whole Foods Markets across the United States.

Emeril made a guest appearance on ''Jon & Kate Plus 8'' during the show's 5th season to help celebrate their 100th episode in May 2009. He also provided the voice of Marlon the Gator in the 2009 Disney film, ''The Princess and the Frog''.

In November 2009 Lagasse announced that he is planning a new cooking show featuring him that he hopes will be featured on network prime time television.

Lagasse also teamed with fellow Food Network personality Mario Batali in a tag battle against Bobby Flay and White House executive chef Cristeta Comerford on an episode of ''Iron Chef America'' which aired on January 2, 2010.

In April 2010 Lagasse began hosting a new weekly variety program, ''The Emeril Lagasse Show'', which airs on Ion Television each Sunday. On the Animated television show Futurama, Lagasse is parodied by the Alien Chef Elzar, who often uses Lagasse's signature "BAM!" and "Kick it up a notch!"

In September 2011, he will host a show from Hallmark called Emeril's Table.

Contribution to space exploration

In August 2006 Lagasse contributed several recipes to the meal selection aboard the International Space Station, as part of a general NASA effort to improve the quality of the food supply for astronauts. Lagasse’s cuisine in particular was selected in the hopes that the spicier fare would offset the reported tendency of microgravity to deaden flavors.

Cuisine

Lagasse describes what he calls his new and different use of local, Louisiana ingredients in his own interpretation of Creole, strongly influenced by Asian, Portuguese, and Southwestern, as “New New Orleans” cooking. The styles of cuisine from Lagasse’s many restaurants vary a great deal from one another. Tchoup-Chop in Orlando is “Pan-Asian” while Delmonico at The Venetian in Las Vegas is a steakhouse with a Southern flair.

Merchandising and endorsements

Lagasse has a wide range of Emeril-branded products. On June 8, 2000 he signed a deal with B&G; Foods to create a line of dry grocery products marketed under the label Emeril's. The product line includes pasta sauces, marinades, salsas and Lagasses' signature "Essence" spice blend. He followed this up in 2004 by lending his name to a line of fresh produce made by Pride of San Juan. The products, branded "Emeril's Gourmet Produce," include spring mix salad blends, fresh herbs and heirloom tomatoes. He now also has canned pasta like Chef Boyardee.

Lagasse also has two lines of kitchen knives produced by Wüsthof and cookware made by All-Clad as well as a line of kitchen electrical appliances made by T-Fal.

He has appeared in Crest toothpaste commercials yelling his signature catchphrase, "BAM!".

On February 19, 2008 Martha Stewart Living Omnimedia announced it had acquired the rights to all Emeril products including cookware, cookbooks, television shows and food products in a $50 million agreement. Lagasse retains rights to his restaurants and corporate offices.

Lagasse also hosted a YouTube contest for Crest Whitening Expressions toothpaste called ''What's Your Catch Phrase''?

Joanna Newsom (born January 18, 1982) is an American harpist, pianist and singer-songwriter from Nevada City, California.

Early life

Newsom grew up in the small town of Nevada City, California. As a child, Newsom was not allowed to watch television or listen to the radio because she was raised by doctors who were "kind of idealists when it came to hoping they could protect us from bad influences, like violent movies, or stupid stuff". She was exposed to music from a young age. Her father played the guitar and her mother was a classically trained pianist who played the hammered dulcimer, the autoharp and conga drums. She attended a Waldorf school where she studied theater and learned to memorize and recite long poems. This skill helps her to remember lyrics while on tour.

At the age of 5, Newsom asked her parents if she could play the harp. Her parents eventually agreed to sign her up for harp lessons, but the local harp teacher did not want to take on such a young student and suggested she learn to play the piano first. Starting at the age of four, she began playing the piano and later the harp, which she "loved from the first lesson onward." From her instructor, Joanna learned composition and improvisation. She learned to play on smaller Celtic harps until her parents bought her a full-size pedal harp in the seventh grade. During her teens, she and the instrument became inseparable, and she describes her relationship with the harp as similar to "an artificial limb or a wheelchair. It’s almost part of me, but more to the point, it serves a purpose, and if it wasn’t there I would wonder what was supposed to fit in its place."

She studied composition and creative writing at Mills College in Oakland, California. While at Mills, she played keyboards in The Pleased. She dropped out of the school in order to focus on her music.

Career

In 2002 and 2003, Newsom recorded two EPs, ''Walnut Whales'' and ''Yarn and Glue''. These homemade recordings were intended to serve as a document of her early work; she recorded them on a Fisher-Price tape recorder. These EPs were not intended for public distribution. At the suggestion of Noah Georgeson, her boyfriend at the time and the EPs' recorder, she burned several copies to sell at her early shows. John Fellman, co-producer of Mission Creek Music and Arts Festival, claims to be the first to have booked a show for her.

A friend of Newsom's passed one of these CDs on to Will Oldham at a show in Nevada City. Oldham was impressed with Newsom's music and asked her to tour with him. He also gave a copy of the CD to the owner of Drag City, his record label. Drag City signed Newsom and released her debut album ''The Milk-Eyed Mender'' in 2004. Shortly thereafter, Newsom toured with Devendra Banhart and Vetiver and made an early UK appearance at the Green Man Festival in Wales, returning to headline in 2005, 2007 and 2010.

Newsom's work has become prominent on the indie scene. Her profile has risen, in part, due to a number of live shows and appearances on shows like ''Jimmy Kimmel Live'' on ABC.

Her second album ''Ys'' was released in November 2006. The album features orchestrations and arrangements by Van Dyke Parks, engineering from Steve Albini and mixing by Drag City label-mate Jim O'Rourke. On a road trip, Bill Callahan recommended she listen to the album ''Song Cycle'' by Parks, which led to his being chosen to arrange her work on ''Ys''.

Joanna is known to debut songs impromptu at her concerts. On March 28, 2009, she performed over two hours of new material at a 'secret' concert in Big Sur, California with fellow Nevada City singer-songwriter Mariee Sioux under the pseudonym 'The Beatles's'. Those in attendance reported that about one-third of her new material was played primarily on piano, with a backing arrangement of banjo, violin, guitar and drums.

Since late 2006, Joanna has performed a solo harp version of the Robert Burns poem "Ca the Yowes Tae the Knowes".

Several of the songs on ''The Milk-Eyed Mender'' have been covered by her peers. "Bridges and Balloons" was covered by The Decemberists on their 2005 EP ''Picaresqueties''. "Sprout and the Bean" has been covered by The Moscow Coup Attempt and Sholi. "Peach, Plum, Pear" has been covered by Final Fantasy (Owen Pallett) on the 2006 EP ''Young Canadian Mothers'', as well as by Straylight Run. M Ward has played "Sadie" at some of his live shows.

In 2009, she appeared in the music video for the song "Kids" by the group MGMT.

On January 12, 2010, an entry cryptically entitled "@!?*(%$#!!" was posted on the Drag City website. It contained a link which led to a short comic strip titled "Joanna Newsom 'Have One on Me'" with a date of February 23, 2010. Later that day, it was confirmed by Spunk, Newsom's Australian label, that the title and date represented the title of Newsom's upcoming album and its release date. P-Vine Records in Japan announced that ''Have One on Me'', which was recorded in Tokyo in 2009, would be released in Japan on March 3, 2010, as a 3-disc CD set, with a total of approximately three hours of new recordings. Newsom was chosen by Matt Groening to perform at the edition of the All Tomorrow's Parties festival he curated in May 2010 in Minehead, England.

On February 11, 2010, Pitchfork Media reported that Newsom would be the subject of a tribute book titled ''Visions of Joanna Newsom'' which has now been published by Roan Press. She toured throughout Europe and America in 2010 to promote her latest record, supported by a five-man band. In December 2010, a tribute album of Newsom covers was released as a digital download. Artists involved include M. Ward, Billy Bragg and Owen Pallett, with all proceeds going to Oxfam America's Pakistan Flood Relief Efforts.

On July 19, 2011, Newsom's second single, ''What We Have Known'', was be released on 12" vinyl. The single was originally the b-side to her first single, ''Sprout and the Bean''. In June 2011, she filmed her second music video (for the song "Good Intentions Paving Company") with directors Karni & Saul.

Style

Newsom's earlier work was strongly influenced by polyrhythms. Her harp teacher, Diana Stork, taught her the basic pattern of four beats against three which creates an interlocking, shifting pattern that can be heard on ''Ys'', particularly in the middle section of "Sawdust & Diamonds." After ''Ys'', Newsom said she had lost interest in polyrhythms. They "stopped being fascinating to me and started feeling wanky."

The media have sometimes labeled her as one of the most prominent members of the modern psych folk movement. Joanna, however, makes no ties to any particular music scene. Her songwriting incorporates elements of Appalachian music and avant-garde modernism.

Newsom's vocal style (in the November 2006 issue of ''The Wire'' she described her voice as "untrainable") has shadings of folk and Appalachian shaped-note timbres. Newsom has, however, expressed disappointment at comments that her singing is "child-like."

Critics noticed a change in Newsom's voice on her latest album. In the spring of 2009, Newsom developed vocal cord nodules and could not speak or sing for two months. The recovery from the nodules and further "vocal modifications" changed her voice.

In addition to her solo work, Newsom has played on records by Smog, Vetiver, Nervous Cop, The Year Zero, Vashti Bunyan, Moore Brothers, Sydney Symphony Orchestra, Golden Shoulders and The Roots and played keyboards for The Pleased.

Personal life

Newsom's family includes her brother Pete, a fellow musician, and sister Emily, who inspired her song "Emily" (and contributed backing vocals). She is the second cousin, twice removed, of Lieutenant Governor Gavin Newsom of California. She has dated Noah Georgeson, Bill Callahan and is dating Andy Samberg.

Julian Miles "Jools" Holland OBE, DL (born 24 January 1958) is an English pianist, bandleader, singer, composer, and television presenter. He was a founder of the band Squeeze (1974-1980 & 1985-1990) and his work has involved him with many artists including Sting, Eric Clapton, George Harrison, The Who, David Gilmour, Magazine and Bono.

Holland is a published author and appears on television shows besides his own and contributes to radio shows. In 2004, he collaborated with Tom Jones on an album of traditional R&B; music. He currently hosts ''Later... with Jools Holland'', a music-based show aired on BBC2, on which his annual show the Hootenanny, is based.

Life and career

His great grandfather came from Ireland.

Holland played as a session musician before finding fame, and his first studio session was with Wayne County & the Electric Chairs in 1976 on their track "F*ck Off."

Holland was a founding member of the British pop band Squeeze, formed in March 1974, in which he played keyboards until 1981 and helped the band to achieve millions of record sales, before pursuing his solo career.

Holland began issuing solo records in 1978, his first EP being ''Boogie Woogie '78''. He continued his solo career through the early 1980s, releasing an album and several singles between 1981 and 1984. He branched out into TV, co-presenting the Newcastle-based TV music show ''The Tube'' with Paula Yates. Holland achieved notoriety by inadvertently using the phrase "groovy fuckers" in a live, early evening TV trailer for the show, causing it to be suspended for six weeks. He referred to this in his sitcom "The Groovy Fellers" with Rowland Rivron.

In 1985, Squeeze (which had continued in Holland's absence through to 1982) unexpectedly regrouped including Jools Holland as their keyboard player. Holland remained in the band until 1990, at which point, he again departed Squeeze on amicable terms to resume his solo career as a musician and a TV host.

In 1987, Holland formed The ''Jools Holland Big Band'' which consisted of himself and Gilson Lavis from Squeeze. This gradually became his 18-piece Rhythm & Blues Orchestra.

Between 1988 and 1990 he performed and co-hosted along with David Sanborn during the two seasons of the music performance program Sunday Night on NBC late-night television. Since 1992 he has presented the eclectic music program ''Later... with Jools Holland'', plus an annual New Year's Eve "Hootenanny".

In 1996 Holland signed a record deal with Warner Bros. Records and his records are now marketed through Rhino Records.

Holland has a touring band, The Rhythm And Blues Orchestra, which often includes singers Sam Brown and Ruby Turner. In January 2005 Holland and his band performed with Eric Clapton as the headline act of the Tsunami Relief Cardiff. He also headlined the Skegness SO Festival in July 2010.

Personal

Holland lives in the Westcombe Park area of Blackheath in southeast London, where he had his studio, Helicon Mountain, built to his design, heavily inspired by Portmeirion, the setting for the 1960s TV series ''The Prisoner''. Holland owns costumes and props from the series and occasionally appears wearing the trademark brown-with-white-pipe blazer featured in the series. In 1987, Holland demonstrated his love of the series and starred in a spoof documentary, ''The Laughing Prisoner'', with Stephen Fry, Terence Alexander and Hugh Laurie. Much of it was shot on location in Portmeirion, with archive footage of Patrick McGoohan, and featuring musical numbers from Siouxsie and the Banshees, Magnum and XTC. Holland performed a number towards the end of the program. Holland is also a Millwall FC fan. His younger brother Christopher also plays organ in the Rhythm & Blues Orchestra as well as being a successful singer/songwriter in his own right.

Holland was an interviewer for The Beatles Anthology TV project, and appeared in the 1997 film ''Spiceworld'' as a musical director.

He received an OBE in 2003 in the Queen's Birthday Honours list, for services to the British music industry as a television presenter and musician. In September 2006 Holland was appointed a Deputy Lieutenant for Kent. He is also known for his charity work: in June 2006 he performed in Southend for HIV/AIDS charity Mildmay, and in early 2007 he performed at Wells and Rochester Cathedrals to raise money for maintaining cathedral buildings. He is also patron of the Drake Music Project and has raised many thousands of pounds for the charity.

Jools Holland was appointed an Honorary Fellow of Canterbury Christ Church University at a ceremony held at Canterbury Cathedral on 30 January 2009.

On 29 August 2005 Holland married Christabel McEwen, his girlfriend of 15 years (between 1983 and 1995 she had been married to Edward Lambton, 7th Earl of Durham, but they divorced). The wedding, at St James's Church, Cooling near Rochester, was attended by many celebrities, including Ringo Starr, Robbie Coltrane, Stephen Fry, Lenny Henry, Noel Gallagher, Dawn French and Jennifer Saunders.

Holland is also a patron for The Milton Rooms, a new Arts centre in Malton, North Yorkshire, along with Bill Nighy, Imelda Staunton and Kathy Burke.

Writing

His 2007 biography, ''Barefaced Lies and Boogie Woogie Boasts'' was BBC Radio 4 "Book of the Week" in the week beginning 8 October 2007 and was read by Holland. He is the author or joint author of four other books.
