Soda Bread 3 cups flour 3 tsp. baking powder 1/2 tsp. baking soda 1 tbsp. sugar 1/2 tsp. salt 1 1/2 cups buttermilk or regular milk soured with 1 1/2 tbsp. vinegar melted butter or margarine Sift together dry ingredients. Add buttermilk and mix until no longer dry. Don't over mix. Put dough onto a floured surface and form into a ball. Put into a round greased pan or greased cookie sheet. Shelley Young demonstrates how to make Irish Soda Bread, a perfect example of a quick bread. Irish Soda Bread 2 cups flour 1/4 wheat bran 1 tablespoon baking soda 1/2 teaspoon salt 2 ounces butter 1 cup golden raisins 1 cup buttermilk 2 teaspoons caraway seeds 1/4 cup oats Mix all ingredients together, form into 2 small round disks and place on parchment-lined baking sheet. Brush top with buttermilk, sprinkle with oats and sugar, slash top, bake at 400 degrees until firm and brown, about 20 minutes. Serve with butter.

How to make Brown soda Bread, with ground Flax seed
Brown bread is EASY to make, and can be used like any other bread. I have adapted a basic recipe to include ground flax seed for flavor and nutritional value. RECIPE: PRE-Heat oven to 400f/205c INGREDIENTS: 3 cups all-purpose flour 1+2/3 cup whole wheat flour* 1/3 cup ground flax seed* 2 teaspoons baking soda 1 Tablespoon baking powder 2 Tablespoons brown sugar 2 1/2 cups buttermilk *-substitute 2 cups whole wheat flour for the wheat flour/flax seed combo. -Add the dry ingredients to a large bowl and mix well. I used a pastry blender, but a spoon is good enough. -Pour all of the buttermilk into the bowl. Mix with a spoon just until combined. the dough will be loose and crumbly. -Pour out the dough onto a counter(I used waxed paper). Knead gently for a minute until everything holds together. -Divide the dough into 2 loaves. Shape each loaf into a round. Press lightly to flatten the loaves. Cut a cross from side to side into the loaves. DO NOT cut too deep, just enough to split the surface of the bread. -Transfer to a baking pan or 2 pans. I used a cast iron pan to help brown the exterior and give more "crunch" to the bread. -Place in a Pre-Heated 400f oven for 45 minutes. The bread is done when you hear a hollow sound when tapping on the bottom of the loaf. -cool for 10 to 15 minutes. Can be enjoyed hot from the oven, but if you cut it too soon the escaping steam will leave you with a dry loaf. ENJOY !

Delicious recipe for Irish "Speedy Soda Bread" - which my Dad loved - result for an Irishman! Serves 6, 3 ProPoints per serving. I had tried to get this up in time for St. Patrick's day, but I've been experiencing problems uploading onto YouTube. All appears to be fixed now, so I'm uploading this and a few others. Ingredients; 200g (7 oz) self-raising flour ½ teaspoon bicarbonate of soda a pinch of salt 100g (3½ oz) virtually fat-free plain yogurt Filling foods; virtually fat-free plain yogurt For cheese and onion soda bread; add 6 chopped spring onions, lightly fried in a little calorie controlled cooking spray, plus 25g (1oz) grated half fat Chedder cheese and ½ teaspoon grain mustard to the soda bread mix, along with the yogurt. Sprinkle an extra 15g (½ oz) grated half fat Chedder cheese on top of the loaf before baking for 4 ProPoints values per serving. For sultana soda bread: add 30g (1¼ oz) sultanas to the soda bread mix with the yogurt. This will be 4 ProPoints values per serving. Please subscribe if you haven't already :-) More recipes to come!
