A food empire

BEING EXECUTIVE for a Dubai resort means managing more than menus.

When chef Robert Blackborough, right, goes shopping, it is not so much for food as for foodies.

He is ever on the hunt for hot new chefs for his new empire in Dubai, returning to Adelaide for regular scrutiny of the city's up-and-coming culinary talent.

Already he has lured a number of fine Adelaide chefs to the massive man-made resort at which he is executive chef.

His empire is hungry for them.

Blackborough has no fewer than 567 chefs under his command, 17 different food and beverage outlets, menus designed to every cultural palate and an annual food and beverage budget of $US150 million ($165 million).

Atlantis The Palm resort in Dubai is not just big; it is phenomenally huge - self-nominated as the eighth wonder of the world. It has two vast connected towers with 1539 rooms, some with walls made of aquariums.
