 This online version of the print journal of the same name is published by
 Academic Press, Inc. through a program titled IDEAL (International Digital
 Electronic Access Library). Food Microbiology publishes primary research
 papers, short communications, reviews, reports of meetings, book reviews,
 and news items dealing with all aspects of the microbiology of foods. The
 editors aim to publish manuscripts of the highest quality which are both
 relevant and applicable to the broad field covered by the journal. 
 Although all manuscripts will be considered, authors are encouraged to
 submit manuscripts dealing with the novel methods of detecting
 microorganisms in foods, especially pathogens of emerging importance, for
 example, Listeria and Aeromonas. Papers relating to the genetics and
 biochemistry of microorganisms that are either used to make foods or that
 represent safety problems are also welcomed, as are studies on
 preservatives, packaging systems, and evaluations of potential hazards of
 new food formulations. The editors make every effort to ensure rapid and
 fair reviews, resulting in timely publication of accepted manuscripts. 
 
 Research Areas Include:
      Food spoilage and safety 
      Predictive microbiology 
      Rapid methodology 
      Application of chemical and physical approaches to food microbiology 
      Biotechnological aspects of established processes 
      Production of fermented foods 
      Use of novel microbial processes to produce flavors and food-related
 	enzymes
 
 Some articles appearing in the December 1996 issue of the Journal include: 
 'The isolation and identification of microbes from a fermented tea
 beverage, Haipao, and their interactions during Haipao fermentation',
 'Growth of Salmonella enteritidis (SE) in egg contents from hens
 vaccinated with an SE bacterin', and 'The influence of temperature and gas
 mixtures on the growth of the intrinsic micro-organisms on cut endive:
 predictive versus actual growth'. 
 
 Subscription to this electronic journal involves licensing agreements with
 academic and industrial networks or consortia of libraries and can not be
 done on a personal or even title by title basis. However, the table of
 contents and article abstracts for each issue are available online
 free-of-charge. Articles are provided to members of subscriber
 institutions in Adobe Acrobat Portable Document Format.
